Is it hipstery to wear a pocket watch every day and not just in a formal environment?

I don't know. I inherited a silver railroad watch that my dad carried from about 1910 until his death in 1958. I used it until 1967 and put it away. Gave it to my sister-in-law about 1980 with instructions that it be passed on to my nephew, then about age 1 1/2. I asked about it recently; found that she had traded a thousand-dollar watch to someone for groceries. If I still had it, I might in fact use it if I were dressed in a suit. Interesting to see that they're available again. I'd say that it's up to you.

Um no. Just because someone wears something they like dosen't mean it's for a trend. It's like saying that if I wear black that makes me goth. Wear whatever the hell you like who cares what anybody else thinks! Just don't start saying you're a hipster because you have a pocket watch...that's jus stupid.
