Generally speaking They have to have no doubts that what They are doing is not wrong.
The animal is raised (or allowed to grow if in the wild) to sufficient size.
The animal is killed.
The skin is removed with the fur attached.
The pelt (skin plus fur) is treated to keep the fur attached to the skin.
The pelt may then be dyed or treated to make it soft again.
The pelt is then cut into a regularly shaped piece and sewn together with other pieces to form a coat.
It can be lined or unlined.

Kill it, skin it, clean it, treat the hide, sow together, add other materials if necessary. That's probably it. I bet it takes 3 minks just to make one sleeve.
